This Japanese pickle shop, Akaoya, first opened in 1699 and is one of the long-established Japanese pickles stores in Kyoto that has served the imperial family. They always seek to use the “finest” vegetables of the season for their pickles and look for the best farmers who can provide them. The experienced staff carefully pickle each vegetable by hand so each retains its full natural flavor. Akaoya offers traditional Kyoto-style pickles as well as their own originals. One of them is “Wine Eggplant” in which fresh eggplants are pickled in red wine. Another recommendation is “Mayu-aji Daikon” in which white radish is pickled in Kyoto-style white miso (soy bean paste) and homemade koji malt. For the summer time, “Mizu-nasu,” a special round eggplant from the Senshu area of Osaka, is a must try (525 yen).
