The owner and chef of Ariyoshi is Mr. Hidekazu Ariyoshi who trained himself in several renowned restaurants. He opened his own restaurant in July 2011. “When I decide what to serve, I talk with each customer and try to understand his/her preference and the appropriate portion.” As he says, he doesn’t fix the menu and is very flexible. If a customer wants to enjoy some sushi in the course, Hideaki quickly composes the menu; a few dishes like sashimi, soup and grilled fish and an adequate portion of hand-formed sushi with toppings of the customer’s choice. “Enjoy my dishes as you like – that is how I want my customers to appreciate this restaurant.” Taking a seat at the counter and enjoying conversation with Hideaki is another attraction, or if you would like a more relaxing space, Japanese-style floor seating is also available.
