Traditional and essential ingredient for Kyoto cuisine

Specialty shop of “Fu” (dried bread-like pieces of wheat gluten) established in the mid-Edo period (1600-1868).  FUKA has inherited its traditional taste, by using famous water “Shigenoi” for making Nama-fu (fresh gluten cakes).  They offer Yomogi (mugwort)-fu and Millet-fu and now they are challenging to make new flavors, such as Basil-fu and Tomato-fu. Fu-rice cake which is made of strained been paste is wrapped in Nama-fu mixed with seaweed, it is also popular as it has an unusual sticky texture and delicate taste.
