A small boulangerie in Paris – this is what HANAKAGO will remind you of. No wonder, because the owner and baker, Masatoshi Hanakago, learned the basics of baking in France. Before he opened his bakery, his French style bread had already become popular and some of his friends who ran restaurants asked him to bake bread for them. And this is how Hanakago decided to open his bakery. “I want to offer cooking ingredient rather than bread only.” Based on his wish, he creates new bread every day that goes well with versatile dishes, cheeses, wine and even Japanese sake. He used to work as a patisserie in Tokyo and France so that he has a unique sense of the balance and combination between meals and drinks. From word of mouth, professional chefs, sommeliers and bartenders come and visit HANAKAGO to get the best bread for their dishes and drinks. About 20 kinds of bread are regularly available in the shop including six different baguettes and croissants praised as “the true taste of France.” Bread with salty anchovy, a combination of blue cheese and honey… Hanakago offers bread for the mature palate.
