The owner and chef, Yasuhisa Yoneda says, “I try my best to offer a pleasant dining experience for my customers not only with my dishes but with everything. For example, I change the interior decoration to fit the season. A painting with a cool motif is of course good for summer months.” After working for an established Japanese restaurant in Nara, he took over his father’s restaurant in Kyoto that moved to its present location a decade ago. Yoneda welcomes customers to his restaurant as well as offering a catering service for traditional tea ceremony events organized by the masters of tea. The photo is one of the summer dishes using summer vegetables and fish he created for a monk who organized a tea ceremony party. Considering the best cooking method for each ingredient, Yoneda challenges himself to satisfy every customer with his cooking. This is also an essential philosophy in the tea ceremony as well.
