Traditional ‘fu’ that is used for a wide range of dishes

Hanbey Fu is a restaurant that was established more than 320 years ago, and is located near the Gojo Ohashi Bridge on the Kamo River. Kyoto-fu (wheat gluten) is made from Japanese soybeans and Kyoto’s pure water and is used in a variety of Japanese dishes. The excellent glutinous texture gives a particular taste to many dishes. Among them “Saiku-fu” is appreciated for its beautiful colors and gives a rich expression to kaiseki course dishes and Shokado Bento set.  These kind of fu are designed in shapes of seasonal flowers and temari (handball) that represents a good charms on the dishes.
