Mild Saikyo Shiro Miso made using traditional methods
This long-standing miso (salty soy bean paste) shop was established in 1830. The Saikyo Shiro Miso (white miso; 500g for 630 yen) was formerly served to the imperial court and is their most famous product. In Kyoto, people consider Saikyo Miso as synonymous with Honda Miso. Malted rice creates a slight sweetness and is perfect for Japanese soup with rice cake (zoni). More than 30 kinds of items are available such as “Beni-koji Miso” which uses red rice malt, thought to keep the blood pressure and cholesterol low, and “Ate Miso”, which is a great filling for rice balls. The unchanged taste of the products are loved by the local people and widely used from in both regular households and high-class Japanese restaurants in Kyoto.
