    Dried food essential for the taste of Kyoto

    Kakizen Shoten, located just by the main gate of Yasaka Jinja Shrine, specializes in traditional Japanese dried food items such as dried bonito flakes, beans, sesame, wheat glutens and yuba (soy milk skin).  They also supply their items to top class Japanese restaurants and catering restaurants that trust and rely on Kakizen Shoten for the necessary ingredients for preparing the essence of Japanese taste.  Kakizen Shoten’s items may not appear as a main course, but they play an essential role in Japanese cuisine as a broth or a primary flavor of the dishes.  Especially during the New Year’s period, many local people come to obtain ingredients for special New Year dishes such as black beans from the Tanba region of northern Kyoto, which are regarded as the finest of their kind in Japan.  When simmered in sweet syrup, the beans become soft and shiny.  This is an indispensible dish for Kyoto’s New Year’s as well as daily dishes.
