    Clear and deep Japanese broth sustaining the tradition of Kyoto cuisine

    Kyotomi is a traditional Japanese restaurant located at the rear of a narrow lane near Yasaka Jinja Shrine and Kodai-ji Temple.  Broth is a fundamental base of Kyoto cuisine and Kyotomi takes particular care in making their broth.  The chef himself goes out to collect water from a particular well in the city.  Kyoto’s soft ground water matches perfectly with sea kelp extract and dried bonito flakes and is essential when the quality of the broth determines the quality of the dish especially when it is used for almost every dish that is served.  Each plate and bowl is full of seasonal flavor and colors.  In months of important festivals or traditional events, a related item is humbly added to the dish as a way for the chef to show his respect for Kyoto’s history and culture.  Diners can enjoy the fine courtyard garden view from counter seats while there also are private Japanese rooms with a sunken floor for enjoying a relaxing dining time.
