Kyuzaya makes Local Kyoto Tofu only with carefully selected high quality ingredients. Their healthy and rich tasting tofu is made with locally produced soybeans from contracted farmers, spring water from Kyoto’s Atago mountain and nigari (extracted magnesium chloride from sea water) from around Japan. No extra ingredients area added to create a taste of “Honmamon”; truly delicious tofu. One of the popular items is “Maki Yuba (tofu skin)” (880 yen per roll; available number is limited), which is hand made by an artisan, carefully skimmed from the simmering soy milk and rolled one by one. You can enjoy the sweetness of soybeans as well as the unique texture of yuba.
