Le Sarment Dor’s building used to be a tradiitonal ochaya (where maiko and geiko work and live). Entering through the curtain, you step into the restaurant with a relatively small kitchen space. The counter seats are sunken floor style where diners can enjoy watching the chef, Koji Ueshima’s “French style cooking combined with a deep knowledge of Kyoto.” No matter which ingredient he chooses, Ueshima unveils their finest flavors and artistically cooks them in a way that it always a surprise to diners. In winter, tilefish from the Tango Sea (north of Kyoto prefecture) with turnip and truffle is recommended. The natural taste of grilled tilefish goes perfectly with turnip mousse.
