    Shredded cabbage and slices of ham in a roll – Simple yet delicious bread that is Kyoto people’s favorite

    As soon as you stand in front of the bakery, you would feel nostalgic as if you have stepped back in time. Established in 1947, Maruki Seipanjo has been run unchanged and loved by the local customers for many years.  The machiya (traditional Kyoto style townhouse) style shop has a glass shelf for their products instead of the normal open shelves and customers make an order as they select the item at the counter, just like in the old days.  There are about 60 kinds of pastries, and savory sandwich rolls that remain mostly unchanged from when the shop first opened.  Sausages, potato salad, red bean paste and condensed milk are the typical fillings longed for by the children from the post-World War Two period.  If you peep in the kitchen located at the rear of the bakery, you will see ladies with aprons and scarves on their head, carefully frying noodles or deep-frying croquettes, hand-making all the products one by one. The most popular savory item is the Ham Roll (shown in the photo).  Making a cut in a roll, and filling it with a piece of ham, shredded cabbage and mayonnaise makes a simple yet delicious savory sandwich roll.  The fresh cabbage, slightly sweet roll and saltiness of the ham are a great combination.  Once you eat one, you will surely become a fan!  What is their secret?  The owner simply says, “Putting a modest amount of mayonnaise and freshly shredded cabbage is the way not to make the roll go soggy.  During the lunch hours, we can hardly keep up making them with the customers buying so many.  This maybe is another reason that you can always enjoy the fresh and delicious ham sandwich rolls”.  You will never get tired of them even if you eat one every day.  This roll might be like “a bowl of white rice” for the Kyoto people – simply a necessity.
