Bean specialist recognized by first-class chefs
Minoyoshi Irie Zakkoku-ten is located just in the center of the Nishiki Food Market. They have offered beans, grains and dried food from around Japan since the Edo period (1600-1868). All beans in the shop are truly the best and are strictly selected in regards to the production area and quality: the Dainagon Azuki red beans and black beans from the Tanba region of northern Kyoto prefecture. Not only general customers but also chefs of first-class Japanese restaurants and professional cooks come here to purchase their beans. Especially at the end of the year, the shop is crowded with people who come to buy beans to prepare for traditional Japanese New Year’s dishes. Their black beans simmered in sweetened soy sauce keep their special texture and the original taste of the beans.
