    Freshly-made yuba with a mild soybean taste

    Senmaruya has been constant in their devotion in making Kyo-yuba (Kyoto-style bean-curd skin) for more than 200 years since 1804. They adhere to an traditional method of lifting up the yuba from boiling soy milk by hand. Their yuba is made from high quality soybeans using Kyoto’s pure water and the yuba has a mild characteristic soybean flavor. Fresh yuba called ‘Kumiage-yuba’ and ‘Hikiage-yuba’ are eaten with soy sauce or ponzu sauce (soy sauce seasoned with citrus juice). Also dried yuba called ‘Kirikomaki-yuba’ and ‘Cho-yuba’ are soaked in water until tender and are used in boiled dishes, soups and pot dishes. ‘Hanachiri’ (735 yen for 55g) is made by boiling yuba and chirimen (small dried fish) with sansho (Japanese pepper) and soy sauce.
