Budding soba noodle restaurant with unique style
The owner, Koichi Numata, always challenges himself to create breakthroughs in his new style soba buckwheat noodle restaurant. His inquiring mind never ceases to produce new recipes. Finally, in 2009, Sobaya Nicolas achieved the Star in the Michelin Guide. Inspired by Italian, French and Chinese cuisines, Numata wishes to entertain his customers with his noodles. He buys Hitachiaki special buckwheat from Ibaraki prefecture and preserves them at a low temperature and grinds only the portion for making noodles for the day with a stone grinder by hand, making his noodles always very aromatic and fresh. Seasonal side dishes served with noodles are also a pleasure to try.
