    Pioneer of counter style sushi in Kyoto

    Sushiiwa opened about 50 years ago and started to offer counter style sushi which was still rare in those days.  While respecting the fundamental techniques of sushi preparation, the present chef always tries to create something new.  Especially, what makes Sushiiwa famous throughout Japan is their finest quality tuna.  The chef purchases only the best of the best tuna from famous ports in Japan such as Oma and Wakayama, depending on the season.  Even Steve Jobs came to Sushiiwa and loved and praised their tuna.  If a diner has a chance to go to Sushiiwa in winter, a must-try is Matsuba-gani king crab caught in the Tsuiyama Port in Hyogo Prefecture.  Sushiiwa’s reliable sommelier will choose the best wine and champagne for your sushi choice.
