Whole-wheat noodles in aromatic fish flavored soup will surely impress you
Takakura Nijo’s whole-wheat noodles have a grayish color similar to soba (buckwheat noodles) though they are not. Rich in minerals, vitamins and fiber, fresh noodles are delivered everyday from their own noodle-making factory. Their aromatic soup is made by adding a lot of small dried sardines, dried kelp, shredded dried bonito and mackerel into a pork-based broth that has been slowly cooked for 17 hours. The thin delicate noodles with the rich soup create an amazing harmony that keeps attracting customers. Besides the whole-wheat noodles, they also offer udon (thicker noodles made with wheat flour) like “Yuzu Futomen” which is made with flour and yuzu, a Japanese citric fruit with a refreshing flavor.
