Tanaka Keiran is a shop specializing in eggs and egg dishes located in the Nishiki Food Market. Their eggs are from hens raised on a special feed that contains powdered black beans from the Tanba region of Kyoto (considered to be the best beans in Japan). No food additives or chemicals are added to their egg rolls and they are flavored solely with a broth extracted from finest konbu sea kelp and dried bonito flakes. Every piece is cooked carefully by hand so as to become incredibly soft and fluffy. They cut the egg rolls into small pieces and skewer them on a stick so that you can enjoy them while walking in the market. Besides the egg roll sticks, classical Kyoto style egg rolls, the egg roll containing pieces of cooked eel, and quiche using white miso (soy bean paste) are also popular.
