    New Kyoto style French cuisine by a young up-coming chef

    “I would like to use ingredients produced by people who I can trust.”  As the young owner and chef, Tatsuki Fujiwara says, he always visits producers before he decides if he will introduce new ingredients for his dishes and confirms the quality with his own eyes and taste buds.  One course menu in winter, for example, offers Shinshu Salmon from Nagano Prefecture prepared over a low heat and a rare Ichibo beef (base of the cow’s tail) of quality Tanba Beef.  The chef’s seasonal course includes about ten dishes.  Surprisingly, Fujiwara takes care of all of them by himself in the kitchen and even serves them to diners one by one.  His careful cooking and hospitable personal service impress all diners.  Only within a few years since opening in March 2011, Tstsuki is surely becoming one of the most popular restaurants in Kyoto.
