Their chef, who is always quietly yet carefully watching each customer’s pace of eating, prepares and serves the next tempura selection with perfect timing. The texture of crispy batter along with the fresh ingredients is also the best of the best. During early summer, oysters, young sweet fish, conger eels, Kamo-nasu eggplants and other seasonal specialties adorn the counter. Once cooking begins, the color, scent and sound of frying tempura will immediately stimulate your appetite. They use cottonseed oil for their cooking which is very light and doesn’t disturb digestion.
