Aromatic taste of soba buckwheat noodles from Shinshu
Ajizen offers handmade soba buckwheat noodles made from buckwheat from the Shinshu region, the center of soba noodles in Japan. “Hiyashi Tanuki (chilled noodles)” (940 yen) is a Kanto (eastern Japan)-style soba that is topped with small pieces of deep-fried tempura batter, seaweed and green onions, and soup is poured over the noodles. The mild and deep taste of the soup attracts many fans. After finishing, don’t forget to try the Soba-yu, the water used for boiling the noodles. They grate buckwheat grain for Soba-gaki and Agedashi Soba-gaki after receiving the order, making the dishes extremely fresh and aromatic. It takes a while, but it worth waiting for so as to enjoy the true taste of soba. A variety of Japanese sake and shochu (distilled sake) are also available.
