    The owner of Tokuwo used to work for a venerable Japanese restaurant and became independent and opened his own restaurant when he was young. His principle is “Serving Japanese cuisine that people can enjoy casually.”  As he indicated, the restaurant always has a friendly atmosphere and of course, the dishes are genuine.  The owner cooks from the best use of the seasonal ingredients which are selected carefully by him at the market every morning. In order to bring out the best flavors, plenty of konbu (kelp) is soaked in water for 2 hours instead of boiling. Such careful preparation enhances the delicate and delicious taste of the stock that is mixed with ground peas to make the soup. Enjoy the cuisine as well as the refined use of antiques.
