Tsubakiya has an established reputation for their quality products. Especially their Kuro-mame (simmered and sweetened black soybeans) are famous and local people say “If you are looking for good quality Kuro-mame, you should go to Tsubakiya.” The best quality Kuro-mame, grown in the Tanba district of Kyoto, has a beautiful glossiness. When simmered gently over low heat, they are tender and plump but not soggy. It is most suitable for making simmered sweet Kuro-mame, one of the typical dishes of Osechi (traditional New Year food). Other types of quality beans are widely available such as beans grown in Hokkaido. The photo is of the top grade black beans (Budo-mame) grown in the Tanba district (2,100 yen). Plump and big beans are most suited for the New Yeas Osechi dish. Many type of flour for baking and a wide range of millets such as Mochi-awa, Hie and Kibi are also available. Their wide variety of items is fun to enjoy, even just looking. Those who are health conscious and/or who like to cook from scratch will most enjoy visiting this shop.
