    All of the ingredients and food used for Hikita’s dishes are produced in Japan, from the vegetables and rice grown in Kyoto, wine from Koshu (Yamanashi prefecture) and the fatty Kai Salmon from Yamanashi prefecture that goes very well with the local wine to the special beef from cattle raised on feed made from the lee of grapes, a by-product of wine making.  Based on French cuisine techniques, the chef serves creative and delicious dishes that consist of only Japanese ingredients.  One of their popular menu items for both lunch (included in the lunch menu) and dinner (as an a la carte) is the meat-stuffed cabbage that contains blended minced meat of pork and chicken.  There are other typical sounding menu items, like rice omelet and hamburger steak, but diners will recognize immediately that those at Hikita’s are surprisingly different and original.
